Amanda working at the Hansens Dairy Cedar Falls store

I have to give my daughter credit for this mouth-watering Cheesy BLT Salad recipe.  She is the assistant manager at the Hansen’s Dairy, Cedar Falls store and really likes helping connect people in the Cedar Valley to the good food they provide at the store.  When she told me about this salad, I knew I had to try it.  It was so good, I used it for my recipe in the Hansen’s Dairy August e-Moosletter.

The classic BLT–bacon, lettuce & tomato.  There’s no denying it’s a summertime favorite.  But making it into a salad and adding cucumbers & sautéed onions was genius!  The warm bacon & onions wilts the lettuce just enough where an extra dressing isn’t really needed.  All these ingredients were purchased at the Hansen’s Dairy Cedar Falls store.  It’s also a great time to buy bacon at Hansen’s as they’re offering a coupon discount month of August.  Check out the coupon here.

Cheesy BLT Salad

I like to cook my bacon in the oven for several reasons.

  • It doesn’t make a mess all over the stove, counter & floor
  • It doesn’t spatter on my clothes or burn my skin
  • It doesn’t make the whole house smell like bacon for the next few days

 

Granted, it does take a little longer, but I figure I make up the time with less clean-up.

My husband used shredded mozzarella cheese for his Cheesy BLT Salad, but you can use whatever cheese you have on hand.  Being allergic to dairy, I just left it off my salad.

This salad was so full of flavor and filling, it was a meal in itself.  You could use it as just a side, too by adding more vegetables.
