Spring Warmth
I’ve been so thankful for the warmer weather we’ve experienced lately. The sun and rain really made the grass green and the trees leaf out. Most days it feels like summer, rather than spring. Yesterday & today, have felt a little more like spring, though: cloudy and rainy with cooler temperatures. Perfect for Asparagus Soup!
As I said in an earlier post, asparagus is in season right now and there are so many good ways to fix it. Asparagus Soup is a quick, simple way to warm up with spring foods, taking less than 30 minutes from start to finish. It is ideal when supper needs to get on the table in a hurry.
Switch it up!
This recipe can easily be modified by adding protein to it. Browned hamburger or other ground meat, crumbled bacon, diced ham, or other meat could be added after pureeing. It also lends itself to cooked beans, lentils or tofu. That’s what’s fun about cooking-you can take the recipe and make it your own.
